At source, basement or central? Installing a grease trap AT SOURCE means that the grease is trapped where it is produced. That may be under a sink, next to an oven or beside a wok. This ensures pipes are protected at the start. Sometimes there is simply no other option otherthan to install at source.
Installing a grease trap in a BASEMENT is also quite common. There may be enough space and all kitchen equipment can run into the one system. A manual or passive grease trap installed in a basement must be well ventilated and pumped empty at least once a month. An automatic system in a basement is a better option as it removes the grease by itself every day.
Installing a grease interceptor or grease trap in the GROUND is another option if there is space. These traps must be pumped empty once a month.
