GREASE GUARDIAN
Grease traps/grease interceptors are designed to separate Fats, Oil and Grease (FOG) waste from waste water. The water from kitchens and restaurants containing FOG enters the Grease Guardian and solids are collected in a strainer basket. FOG will rise to the top of the tank as it is lighter than water and clear water will escape under the outlet baffle. Through a heating and skimming process the grease and oil are removed and collected in a container that can be removed and recycled.
GET THE RIGHT SIZE GREASE TRAP
When selecting a grease trap it is important that the unit has been sized correctly. The grease in the tank of the grease trap will need a certain length of time to separate from the water in the tank. The size of the grease trap will be dependent on how many kitchen appliances are entering the Grease Guardian.

Automatic grease removal units are typically an under sink grease trap with a method of removing the trapped grease and sludge on a daily bases. This ensures the grease trap remains efficient as the waste is extracted on a daily bases. A properly maintained automatic grease trap ensures compliance and stops FOG waste from entering the sewers.
IMPROVE WASTE MANAGEMENT
Improving waste management in a restaurant or busy kitchen will help. It is important to try and reduce the amount of FOG and food entering the drains by using sink strainers and food waste strainers. Avoid brushing food waste into floor drains, never pour oils and fats down sinks and drains and scrape excess food waste from plates and pots.
