Lumps of Fat, Oil and Grease (FOG) in the storm drains was discovered during work on the very busy Bourbon Street after a bad smell was reported.  Workers found that some restaurants had access to the storm drains and the foul smell was from the FOG waste collecting in the drains. Storms drains typically carry storm water and are not connected to kitchen sinks or drains.

FOG hot spots are normally located in an area with a high concentration of restaurants and businesses. The high volume of fats and oils being used in a commercial kitchen and large canteens contribute to FOG waste being disposed down sinks and drains.  If no grease trap is installed then the FOG waste will be going down the drains and into the sewers!  Reducing the amount of food waste and FOG waste and entering the drains will help keep pipes from clogging up and reduce expensive line jetting and down times for a business.   A grease traps can help reduce the problem and are available in a variety of sizes and applications to suit the needs of each kitchen. The most common installation is an automatic grease trap that can be located under kitchen sinks, pot washes sinks and combi ovens.

HOW DOES A GREASE GUARDIAN AUTOMATIC GREASE TRAP WORK

Grease from sinks and ovens enter the stainless steel grease trap through an inlet. The food waste is strained into a removable filter allowing the grease to separate from the water in the main tank.
