Harvard University Elevates Grease Management with Grease Guardian’s Advanced AGRDs

When Harvard University encountered significant issues with their existing grease management system, they sought a more reliable and efficient alternative. Their previous Automatic Grease Removal Devices (AGRDs) failed to meet the demands of their high-volume operations, resulting in frequent breakdowns and operational inefficiencies. Grease Guardian stepped in to deliver a robust and comprehensive solution tailored to the university’s needs.

Centralised Solutions for High Volume Applications

At the heart of the new system are Grease Guardian’s Centralised Automatic Grease Removal Devices (AGRDs), including one GGX150 and four GGX125s, all featuring AST (Automatic Solids Transfer) technology. These units, installed in the basement of Harvard’s Science and Engineering Complex, are designed to handle large volumes of grease and food waste from multiple kitchens across the facility.

The key feature of these units is their advanced skimming process, which is central to their efficiency. The system automatically skims fats, oils, and grease (FOG) from the wastewater, collecting the grease in large external containers. This process ensures that the grease is separated and removed before it can enter the drainage system. What sets this system apart is the purity of the collected grease – it’s ideal for repurposing into biofuel, making it an environmentally friendly solution.

The installation also features a pump sump which collects food waste from the GGX125s and efficiently pumps it to the drain, ensuring a clean and hassle-free operation.

Protection At The Source

In addition to the centralised units, Grease Guardian also installed two GGX35 units and one GGX25 unit directly under the sinks in the kitchens. These At-Source AGRDs protect pipes at the source, preventing grease from entering the drainage system. This dual-layer approach ensures comprehensive coverage, minimising maintenance and maximising efficiency.

Why Grease Guardian?

Harvard University’s transition to Grease Guardian was driven by the need for a dependable and scalable solution that could handle the complexities of their multi-kitchen operations. The previous system’s shortcomings highlighted the importance of investing in technology that not only meets but exceeds operational requirements. Grease Guardian’s Centralised and At-Source AGRDs have provided a seamless, sustainable solution, optimising grease management and ensuring compliance with environmental standards.
