Grease Guardian® Technology: Protecting Cities from Fatbergs

Fatbergs cost UK cities millions of pounds each year in emergency clean-ups and sewer repairs. They form when fats, oils and grease (FOG) are poured down sinks, cool in the pipes, and solidify into a concrete-like mass that traps food scraps, wet wipes and other debris. This results in blockages that damage infrastructure, disrupt services, and pose serious public health risks.

Grease Guardian® Technology

Traditionally, the food service sector has relied on passive grease traps to capture FOG before it enters the sewer. While these systems can be effective if properly installed and maintained, many are undersized, neglected, or simply unable to keep up with busy kitchens. That’s where Grease Guardian®’s Automatic Grease Removal Devices (AGRDs) make a real difference.

These devices are truly remarkable. They actively skim fats, oils and grease from wastewater, using a combination of heat and mechanical skimming to remove up to 99.7% of free-floating FOG before it leaves the kitchen. Unlike traditional traps, the grease collected is high-quality, containing less than 5% water and under 1% impurities, making it perfect for recycling or biofuel production.

The principle is simple: stop FOG at the source, and you stop fatbergs before they ever have a chance to form. For kitchens, this means less maintenance, lower costs, and a cleaner, safer environment. For cities, it’s a solution that could save billions in sewer repairs.

Enzyme Systems: Helpful, but Not a Silver Bullet

Some kitchens also use enzyme dosing systems such as the Grease Guardian BIO features an integrated, automatic dosing system that includes specially selected ingredients to quickly dissolve fats, oils, and grease. This extends the time between manual grease trap pump-outs and includes deodorising agents to neutralise odours, ensuring a cleaner, more hygienic environment. to break down fats, oils and grease in drains. While these can be effective as a support tool, they don’t remove FOG from the system, they simply dissolve it. If used alone, enzymes can’t prevent fatbergs from forming.

The takeaway? Prevention at the source with devices like AGRDs is far more effective, and enzyme systems work best when paired with proper equipment and good kitchen practices.

Staff Training and Preparation Before Washing

Even the best technology needs support from everyday kitchen habits. Staff training is critical: every team member should understand why FOG management is so important. Poor practices can lead to blocked drains, costly maintenance, legal risks, and reputational damage.

Practical steps that make a big difference include:

  • Scrape and dry-wipe plates, trays and utensils before washing.
  • Fit sink strainers to catch food scraps, and empty them regularly into food waste bins.
  • Store and collect used cooking oil safely, never pour it down the drain.
  • Make sure your premises has a correctly sized grease trap that’s properly maintained

By combining Grease Guardian® technology with proper staff training and preparation, kitchens can stay cleaner, safer, and more efficient; and cities can see a significant reduction in the costly fatbergs that plague sewer networks.
