Transforming a Food Prep Centre with Grease Guardian AGRD Technology

Maintaining a clean, efficient, and hygienic food preparation facility is crucial for any high-volume commercial kitchen. La Dolce Vita — a well-established multi-site food operation founded in 1997 in Newry — runs a central Head Office and Prep Centre where they produce pizza kits, stone-baked bases, sauces, and a range of retail products. They also supply prepared foods to multiple takeaway locations as well as their own restaurant.

Over time, the team at La Dolce Vita noticed that their existing grease management system was no longer keeping up with the volume of fats, oils, and grease (FOG) produced by their busy prep centre. Persistent odours and grease build-up were starting to impact both hygiene and operational efficiency. In one instance, the site’s pumping station even seized due to hardened grease accumulating around the pump…a costly and disruptive problem.

To resolve these issues, Grease Guardian installed high-performance Automatic Grease Removal Devices (AGRDs) tailored specifically to the site’s needs. The D3 unit was connected to sinks to manage washdown grease, while the GGX7 was installed to handle grease generated from the two ovens. Together, these systems delivered a reliable, odour-free solution that protected downstream infrastructure and allowed the prep centre to operate smoothly day after day.

The upgrade not only improved hygiene and operational efficiency but also demonstrated a commitment to sustainable and responsible food production practices. Staff immediately noticed a cleaner, more comfortable working environment, and the facility now enjoys long-term protection against grease-related issues.
