High-volume food production in large retail stores can create significant grease management challenges. At Walmart de México y Centroamérica, in-store kitchens producing rotisserie chicken and other hot foods generate large quantities of fats, oils and grease (FOG). These volumes can overwhelm traditional passive grease traps, particularly when grease from combi and rotisserie oven cleaning cycles enters the drainage system, leading to frequent pump-outs and increased maintenance requirements.
To address this, Grease Guardian Automatic Grease Removal Devices (AGRDs) were installed in partnership with regional distributor Eco-technologies. Nearly 1000 units, including GGX15, GGX25 and GGX35 models, were fitted across over 250 stores at key locations such as pot wash sinks, triple bay sinks and combi ovens. By capturing grease directly at source, the AGRDs automatically separate fats, oils and grease from wastewater before it enters the drainage system, improving operational efficiency in busy retail kitchens.
The technology also separates grease from the water generated during rotisserie chicken cooking, recovering a concentrated, high-quality grease that can be collected and recycled. This reduces strain on drainage infrastructure while supporting circular economy practices by turning a kitchen by-product into a valuable resource that can be reused for renewable energy production.
