When Harvard University’s Science and Engineering Complex (SEC) encountered significant issues due to an outdated grease management system, it became clear that a more efficient and sustainable solution was required.
With it’s progressive sustainability agenda and certified green restaurant credentials, SEC required a robust system that could support its high-volume operations, including the SEC Café and Flyby grab-and-go meal service.
The solution needed to not only manage the significant volumes of grease efficiently, but also align with Harvard’s commitment to sustainability by enabling the recovery of grease for biofuel production.
