Restaurants cooking with Fats, Oil and Grease (FOG) should have a grease trap installed.  If no grease trap is installed the FOG waste from cooking will enter the drains and sewers.  This can lead to complications such as blockages, back-ups, repairs and fatbergs!  The sewer system was designed to handle waste water not fats and grease.  There has been a big increase in the amount of consumers eating out each week and as a result more FOG is being produced in restaurant kitchens.  A grease trap is now a vital piece of kitchen equipment.

GREASE GUARDIAN GREASE TRAP

A grease trap (grease interceptor) is designed to prevent fats, oils and grease (FOG) from entering the drains.  The Grease Guardian automatic range has a three stage operation system:

1: Wastewater from the kitchen is directed through the inlet of the Grease Guardian where a removable strainer basket collects solid debris.

2: Grease in the wastewater will float to the top of the tank and is trapped allowing clear water to leave the unit.

3: The timer driven heating element is activated to liquefy grease which is then removed by the skimming wheel and is deposited into a container for recycling.

The Grease Guardian can be connected to Combi-ovens, Chinese cookers, pot wash sinks and floor drains.

COOKING AT HOME

Halifax Water in Canada is appealing to households not to pour grease and fats down the sink or drain.  Halifax Water’s 170 pumping stations are frequently being clogged with FOG which coats equipment and can be a foot thick.  It is an expensive operation to remove the grease from the pumping stations.  In a bid to tackle the problem Halifax Water have made an educational video to help homeowners reduce the amount of FOG going down drains.
