Grease traps are a common feature in restaurants and busy food outlets.  Grease traps or grease removal devices work by separating Fats, Oil and Grease (FOG) from waste water.  Reducing the amount of FOG waste entering drains and sewers is important and reduces the risk of flooding, back-ups and foul smells.

Households can also help reduce the amount of FOG waste entering the sewage system.  The below list is an example of foods and liquids that should not be washed down sinks or drains:

SAUCES & DRESSINGS – Remove excess butter, margarine, lard, sauces, mayonnaise and salad dressings from plates before washing.

OIL – Never pour oil down the sink or drain.  The oil may be liquid when poured down the sink but once it cools it will congeal and form a blockage over time.  Oil should be collected in a jar or container and disposed into the bin once the container is full.  Removing excess grease and fat from plates and cooking utensils before washing them can reduce the amount being washed down the drain.

FOOD WASTE – Scrap excess food from plates before washing in the sink and avoid washing coffee grounds down the sink.  Excess food and coffee grounds can cause blockages and foul smells if they accumulate.  Installing a sink strainer will help reduce the amount of waste going down the sink.
