WHAT IS A GREASE TRAP?
What is a grease trap and where can I get one is often the first question people ask when told by a plumber or water authority to install one. Grease traps are essential a plumbing device that traps fats and oils discharged to drain during the cooking or washing up processes in a commercial kitchen. Grease traps can be anything from the size of a microwave to very large tanks installed in the ground. There size depends on the flow rate they are designed to handle and the standards used by local authorities.
Grease Traps work by allowing grease enough time to separate from water and float to the surface where they are trapped behind a baffle. Normally, the grease trap needs to be emptied before the trapped grease reaches a certain volume (usually about 25% of the actual liquids volume of the tank). A pumping company will empty the grease trap typically once a month.
A grease removal device is a grease trap that has a mechanism for removing the trapped grease once trapped meaning that the need for "pump outs" is greatly reduced if not eliminated.
